Kefta Goodness

If you’re not familiar with Kefta, it’s a middle eastern spiced meatball, kebab or burger. Traditionally made with ground lamb or beef or both. This is not a dish I grew up with as my family’s roots are Russian, but I’m pretty sure there are as many versions as there are families in the region and each family is partial to their family’s recipe. I will say it’s it’s a winner. It certainly takes your ground meat to another flavor level, they’re tender and super satisfying. I like incorporating these into a blood sugar detox or cleansing protocols as they're filled with nutrient goodness and the big flavor won't leave your longing for anything. Here is a simple version that has been making it into my family’s weekly round up. Let me know what you think.

Ingredients

  • 1 pound grass fed ground beef or lamb

  • 1 teaspoon sea salt

  • 1 yellow onion

  • 2 - 4 cloves minced garlic

  • ½ bunch flat leaf parsley

  • ½ bunch cilantro

  • 1 teaspoon ground cumin

  • 1 teaspoons ground coriander

  • Pastured lard, duck fat or ghee for cooking

Directions

  1. Place your onion, garlic, parsley and cilantro in a food processor and process until everything is minced small.

  2. Put your ground meat and seasoning into a large glass bowl and combine with the vegetables. I like to mix it all with my hands until well combined.

  3. Place some of your cooking fat in a fry pan on medium heat. Cook one off to start and make any seasoning adjustments to your taste. You want them browned on both sides and just cooked through. I like small to medium ovals type patties but form them any way that you like. If you’re satisfied, cook the rest. If not make adjustments until you get ‘em just right. I like to serve them with Raita, hummus and hot sauce.
