Delicious Pork Roast with Rosemary, Garlic & Prunes

Here's a favorite recipe that's naturally Paleo, AIP, SCD and GAPS friendly... so it should please many different dietary needs! However, dietary restrictions need not be a prerequisite to enjoy this delicious pork roast. It's been a hit with my friends and family for years and I hope it will be a hit in your home too! It's simple, delicious and easy to make. It’s great to serve when you’re having guests or a party or with a little morning prep can make an easy weekday supper. It can be made ahead of time and is good served right out of the oven, warm or at room temperature.

Ingredients

  • 2 - 3 pound pork roast without the bone but with fat on it

  • 3 - 5 sprigs rosemary

  • 5 - 7 cloves peeled garlic

  • 7 - 10 prunes

  • coarse sea salt

Directions

  1. Preheat oven to 425 degrees.

  2. Make several small incisions along the pork roast and insert the cloves of garlic and prunes. Place the rosemary lengthwise along the roast (if the roast is tied together, slip it under the twine, otherwise you can secure the rosemary with twine by tying it in a few places.

  3. Roll the entire roast in the salt and place in a roasting pan.

  4. Roast for 30 minutes. Then reduce heat to 375 degrees and cook approximately 30 - 40 minutes. You can use a meat thermometer and the internal temperature should be about 145 degrees (for a pale pink center) or 160 degrees for well done. Remember it will continue to cook after you remove it from the oven.

  5. Let stand for 15 minutes before serving.
